They say time flies when you are having fun. I think I need to reword that old cliche'. My time seems to have flown by me and I don't think it was all fun! LOL Work has truly kept me hopping for this past month. I am in the throws of training a new girl in the Jackson office, planning the training of a new girl in my own office who will fill my position as I am promoted now, spending a couple days in Louisville for my own training for this new position and I am planning our annual meeting for February again. All this and continuing my constant stream of work responsibilities plus those that I can manage from my new position. I fear I am falling behind! I guess if I scrutinize a bit closely I could say I have had fun though.
In Jackson, I had the wonderful opportunity to spend time with Maree at her home. She is filipino so we made plans for me to go a day early on both my trips over so she could teach me some cooking filipino style! I had a blast! I also met a really nice couple who are her friends. Angie decided she needed the cooking lesson as well. So far this is what I have learned to make: Lumpia's (a kind of meat egg roll), fried rice, wonton soup, vegetable egg rolls, crab rangoons, some kind of chicken dish that her uncle taught her to make and a beef/onion dish served over white rice. How many days was I there? Well, the first week I was there for 2 nights and the 2nd week I was there over 1 night. So, we were cooking fools! I also ate another dish that was a tomato-based dish with chicken legs in it that is served over white rice...she cooked it prior to my arrival. Angie and I really learned a lot. The 2nd trip I met two more friends of hers and Lisa took up the cooking lessons with us.
My attempt at making the fried rice was wonderful! Now Zach also knows how to make it because he loves it...only he loves his without the egg, vegies or onion in it! Maree made him his own batch and sent it over to him! She spoiled him! Have a look...cause you KNOW I took pix of the first batch I made on my own. Doesn't this look good???? MMMM....it was so very good!
I can not believe how simple this is to make! And you are limited by your own imagination when it comes to choosing what to put in it. In this batch I happened to have some shredded carrots on hand so I tossed a few in. She says you can add chicken, ham, shrimp, cabbage, just anything that suits your fancy. I am afraid this dish will be worn out at my house!Here are a couple of shots her her daughter that I took my first day there. The sun was setting and she had this awesome picture window where the light coming in was perfect for a natural light opportunity that I took advantage of...I had to work quick because the sun was setting so quickly. But I am pleased with my results. She is a little doll and she LOVES the camera. I can't wait until the late spring-early summer to go back and do some shooting of her.


Speaking of my photography, I am making some plans. I get so frustrated when I don't have 'time' to play with it and expand my skills. I have so much to learn and there seems to be no time available for me to work at it and with the little time I do have, I seem to forget things that I previously learned. It is like that you know. You might not forget how to 'ride the bike' but you certainly forget how to do it well. So I am making plans. I have a few ideas that I think really appeal to me so I have to decide how to make it work. I have a friend who is a photographer...he does some amazing flower shots among other things. I thought I would ask him to let me tag along with him while he works so he could give me pointers and teach me some things that I see him do. Also, I have a couple of books that for at least 2 years, I have been trying to work through. I thought I would set up my lessons and devote at least 1 Saturday a month to going out and working. I think I would really love to devote 4 Saturday's a month...but somehow, I just can't see myself doing that at all. I have so many things that I have to fit in on Saturday's as it is. I pay my bills every Saturday, I clean my house--and we know that can't be let go, I run errands, do groceries and use Saturday to visit those I should visit more often. I need to really prioritize myself and my time, don't I? Doing a study is simply not something I can do with my family in tow. I have to be alone where I can think and shoot...and basically wonder around the area searching for subjects. Isn't that funny? I will have to treat it as a class....only I will be the instructor and the student! If I can get my friend to let me tag along, well, then I have to be the student only...I hope he will let me tag along a few Saturdays. I know as spring approaches, he will be out and about--I am sure he is anyway.
Hey! I have a super-cool scrap artist that I follow faithfully. I want to share her with you. I totally LOVE her work and her passion. Her work truly inspires me.
